Green Paste recipe

Mint leaves- 1 cup
Coriander leaves (cilantro)- 1 cup
Cider vinegar- 1/4 cup
Cloves- 1/2 tsp
Turmeric powder- 1 tsp
Fenugreek seeds- 1 tsp
Ginger- 1 inch piece
Garlic- 5 cloves
Seeds from 7 green cardamom
Oil- 1/2 cup
Grind all the ingredients except oil into a smooth paste.

Heat oil in a heavy-bottomed pan and fry the ground paste over medium heat until the oil separates from the mixture.

Drain any excess oil and allow it to cool completely.

Store in an airtight container and refrigerate.
