Amritsari Kulcha is a famous dish throughout the world. Its taste is awesome, crispy from the outside and moist from the inside. I made in on tawa but its taste is similar like tandoor. This special kulcha is filled with potato and various spices, which has made it authentic.Do try this amazing dish and make special a day. I will be waiting for you feedback.

Ingredients
  • For Dough,
  • 500 gm all purpose flour (maida),
  • 2 big tablespoon yogurt,
  • 2-3 tablespoon butter,
  • 2 tablespoon oil,
  • 1 tablespoon baking powder,
  • 1 tablespoon dry fenugreek leaves or kasuri methi,
  • 1 teaspoon kalijeera,
  • 1 tablespoon sugar,
  • salt as required,
  • For Stuffing,
  • 2 medium sized boiled and smashed potato,
  • Fresh coriander leaves,
  • 1 tablespoon spices masala,
  • 1 teaspoon coriander powder,
  • 1 teaspoon red chilli powder,
  • 2 chopped green chillies,
  • 1 tablespoon sugar,
  • salt to taste,
  • 1 teaspoon dry mango powder,
  • grated ginger
Instructions
  1. Dough Preparation :
  2. Add all the ingredients in the maida and mix it properly for 10 minutes with some lukewarm water.Knead it into very soft dough.Now add some butter to give softer and mix it for another 5 minutes.Cover it with a damp cloth for at least 1-2 hour.
  3. Stuffing :
  4. Mix all the stuffing ingredients with smashed potato properly.Stuffing is ready for kulcha.
  5. Kulcha Preparation :
  6. Take a big portion of dough like orange and roll it some into round shape.Put some stuffing in it and roll it.You can flatten the dough like chapati or oval shape.It will be bigger and thicker than normal roti or chapati.
  7. Turn on the gas and take a tawa on it. Heat the tawa for 2-3 minutes on medium flame.Give some butter in it and let it melt.Now give the kulcha and roast it for 40-50 seconds approx on medium flame.
  8. Turn over the other side of the kulcha and roast it until it is golden brown.Next grease both the sides of the kulcha with oil or butter.Now our tasty and delicious Amritsari kulcha is ready to be served hot with some curry like Kadai Paneer or Shahi Paneer and some salad..
