Lemon Rice no onion no garlic recipe step by step pictures
 
 
I am making a rice variety from South India which is prepared on festival days for fasting. It is a no onion no garlic recipe which can be cooked up in minutes.

Ingredients
  • 2 Cups cooked Rice
  • ¾ tsp Mustard seeds
  • 8-10 Curry Leaves
  • 1 tsp Urad dal
  • ½ tbsp Chana dal
  • 2 tbsps Raw Peanuts
  • 6 Cashews, halved
  • 1 Green Chilli, slit
  • 2 Dry Red Chillies
  • ⅓ tsp Turmeric Powder
  • 2 tbsps Vegetable Oil
  • Salt to Taste
  • 2 or more tbsps Lemon Juice
Instructions
  1. Heat up a Non Stick Saute Pan on low flame.
  2. Add Oil to the pan. When the oil is hot, add mustard seeds. Let it crackle.
  3. Add urad dal and chana dal. Let them splutter.
  4. Add peanuts and cashews. Saute them till they turn their colour.
  5. Add curry leaves, green chilli and dried red chilli.
  6. Add turmeric powder. Mix everything well. Tempering is ready.
  7. Add the cooked rice to the tempering and mix well. Add salt according to your taste.
  8. Mix well and turn off the flame.
  9. When the rice is cooled down but still warm add lemon juice and mix well.
  10. Serve with papad and pickle.
Notes
1. Add the lemon juice to cooled rice or it will turn bitter.
2. Adjust the amount of chilli as per your taste.
3. Cook the rice partially or the lemon rice can turn mushy.
