I am making a Kerala Style Spicy Potato Roast. This is a perfect side dish for rice and can go pretty well with rotis too. I love potatoes but I do not eat them often. But I know someone who is crazy for them. So I hope this recipe does justice.

Ingredients
  • 2 tbsps of Coconut Oil
  • 1 tsp of Mustard seeds
  • 15-18 Curry Leaves
  • 1 big Onion, chopped
  • 3-4 cloves of Garlic, chopped
  • 3 medium Potatoes, diced
  • 2 tbsps of Chilli flakes
  • ¼ tsp of Turmeric Powder
  • Salt to taste
Instructions
  1. Heat up a non-stick medium saute pan. Add Oil. Let it heat up.
  2. Add mustard seeds to the oil and wait till it crackles.
  3. Add curry leaves, chopped onion, chopped garlic and salt. Mix it well.
  4. Saute till the onions and garlic are tender.
  5. Add chilli flakes and turmeric powder. Saute the spices.
  6. Add diced potatoes and salt and mix well.
  7. Cover and cook for 5 minutes till the potatoes are soft.
  8. Cook without lid for 5 minutes.
  9. Garnish with few curry leaves and we are ready to serve.
